Ninoy Aquino's Liking for "Sinigang na Bangus"

According to the GMA News TV documentary Sa Hapag ng mga Bayani, a civilian staff at the Fort Magsaysay in Nueva Ecija was cooking sinigang na bangus (milkfish with tamarind-based broth) regularly for Benigno "Ninoy" S. Aquino, Jr. during his incarceration there in the 1970s.

As we celebrate the eightieth anniversary of Ninoy Aquino's birth, following is the translated recipe for sinigang na bangus as featured in the said documentary:

SINIGANG NA BANGUS

Mga sangkap: (Ingredients:)

tubig (water)
sampalok (tamarind)
hugas-bigas (water used in washing rice prior to cooking)
sibuyas (onions)
kamatis (tomatoes)
bangus (milkfish)
kangkong (swamp cabbage)
patis (fish sauce)
siling haba (finger chilis)

Paraan ng pagluluto: (Procedure:)

Pakuluan ang sampalok hanggang maging malambot ito. Alisin sa apoy at lamasin ang sampalok hanggang lumabas ang katas. (Boil tamarinds in water until soft. Remove from fire and mash the tamarinds until the juice comes out.)
    
Salain ang katas at isantabi. (Let the juice pass into a sieve and set aside.)
    
Sa hiwalay na lutuan, magpakulo ng hugas-bigas at saka ihalo ang hiniwang sibuyas at kamatis. (In a separate stove, bring the hugas-bigas to a boil and put chopped onions and tomatoes.)
    
Idagdag ang katas ng sampalok. (Add the tamarind juice.)
    
Kapag kumulo na ang sabaw, ilagay ang nilinis at hiniwang bangus. Pakuluin ang bangus hanggang maluto. (When the broth boils, put the cleaned and sliced milkfish. Boil the milkfish until cooked.)
    
Kapag luto na ang bangus, idagdag na ang dahon ng kangkong at saka timplahan ng patis. (When the milkfish gets cooked, add kangkong leaves and season with patis.)
    
Maaaring magdagdag ng sili ayon sa panlasa. (Finger chilis can be added to taste.)
    
Hanguin at ihain ang sinigang habang mainit. (Remove from the pot and serve while hot.)

  1. I do not know whether it's just me or if perhaps everyone else experiencing issues with your site. It appears as though some of the text on your content are running off the screen. Can somebody else please comment and let me know if this is happening to them too? This may be a problem with my browser because I've had this happen before.
